Program overview
Brewing Engineering is not a "drinking major" — it's the science of using biology, chemistry, and engineering to turn grains and fruits into fine wines. You'll learn how microorganisms work (like how yeast turns sugar into alcohol), get hands-on with small-batch brewing in the lab, and even design a complete beer or baijiu production line. Core courses include Biochemistry, Fermentation Engineering, Brewing Technology, Wine Flavor Chemistry, and Food Analysis. Chinese universities have unique strengths in this field: for example, Jiangnan University and China Agricultural University lead the world in modernizing traditional baijiu and huangjiu, with many labs directly partnering with Moutai and Tsingtao Beer. This major suits students who enjoy hands-on experiments, don't mind biology and chemistry, and want to learn a practical skill.
