Program overview
Viticulture and Enology Engineering, simply put, is about studying how to turn grapes into great wine and how to get more people to love it. This program falls under the engineering discipline, within the category of Food Science and Engineering, but it's more focused than general food engineering—you'll learn both grape cultivation (e.g., growing conditions for different varieties, pest control) and fermentation techniques (how yeast works, the role of oak barrels), as well as sensory tasting (how to describe a wine's color, aroma, and mouthfeel using professional terms). Core courses include Viticulture, Winemaking, Wine Chemistry, Microbiology, Wine Tasting, and Winery Management. Chinese universities have a unique advantage in this field: many have their own vineyards and winemaking facilities, such as Northwest A&F University and China Agricultural University, allowing students to participate in the entire process from harvesting to bottling. This program is ideal for those who are interested in biology and chemistry, enjoy hands-on practice, and even have a bit of a 'foodie' spirit—after all, you'll be tasting repeatedly. If you're curious about agriculture, food, and culture, this program can satisfy all at once.
